• Made with the traditional French Orleans method of vinegar making.
• Fermentation takes place in small oak barrels.
• The resulting product is matured for 12 years, using a solera system - an aging process for liquids by fractional blending in such a way that the finished product is a mixture of ages, with the average age gradually increasing as the process continues over many years.
• A balsamic-style vinegar is yielded, infused with herbs and blended with grape must.
• Specific herbs are macerated in the vinegar; small batches are bottled using a gentle gravity-flow system.
• Natural cork closures allow the vinegar to breathe, evolve and mature further overtime while in the bottle.
